Saucy Squash

I love the fresh produce that you can get in the summer....so tasty and so good for you! Tonight I made a saucy, cheesy squash dish that is similar to a lasagna and deeee-lish!

Saucy Squash
2 medium sized summer squash or zucchini
2 cups spaghetti sauce
2 cups shredded cheese
1 pound hamburger
1.5 cups spinach
Salt, pepper, onion powder, garlic powder, Italian seasoning

Season the burger with salt, pepper, onion powder, and garlic powder and then brown in a skillet until cooked through. Slice the squash into thin pieces, 1/4 inch thick. Pour 1/2 cup of sauce in the bottom of an 8x8" glass dish. Layer half the of squash over the sauce. Cover with the spinach, then a layer of the burger and 1 cup of the cheese. Spread with 1 cup of sauce. Cover with the rest of the squash. Spread the remaining sauce on the squash and cover with cheese. Sprinkle with Italian seasoning and put into a 350 degree oven. Bake for 30 minutes or until squash is soft.



 Lovely layers of color!
 When it's done, it will be a bit soupy, so a bowl is recommended as is Parmesan cheese...just cuz it's yummy. Enjoy!
