Gesundheit!

Nope, I'm not redecorating. This is what happens when I realize I have no money left on my laundry card for the dryer....AFTER the clothes are already in the washer. Every available surface with a corner or a knob is currently in use....looks like my closet had a really big sneeze.

If Only to Get Rid of That Tongue....Numbered Lists!

Weeeeeell, had me one heck of a dream last night/this morning.....I dreamt that my boyfriend cheated on me and then blamed me for pushing him to do it. I woke up during the part where he was telling me about all her friends facebook "friending" him because of her big mouth. I woke up angry with tears on my cheeks and a border-line migraine. I haven't woken up crying in YEARS and didn't particularly miss the feeling. This dream leads me to believe three things:
1. My brain is rediculous.
2. My dream self is a wussy.
3. I may need to take a break from Facebook.

I have taken some Excedrine Headache Relief and my headache is ebbing....my eye no longer feels like it is going to explode out of my skull and the urge to throw up has almost disappeared. In order to fix my poopy mood, I am going to list some of my current favorite things....look out, brightened spirits ahead!
1. Cherry Chapstick- It's a Classic!
2. Josh Turner's "why don't we just dance"- LOVE this song...and that man, that voice...yummy yummy yummy!
3. Sunshine- 62 degrees and sunny here today....Heeeeeelllllllllloooooo spring!
4. Silver nail polish- such a hard and industrial looking color, and yet so pretty on long nails....

My mood has improved already. Now, if you will excuse me, I am off to go for a walk while listening to Josh on repeat....you might see me, I will be the one with the fingernails glinting in the sun, smelling of cherries with a big, stupid grin on my face.

Birthday Hockey Date

This last Friday, Chris and I headed to Detroit to go to a Red Wings game. I bought him the tickets for his birthday in February and we rode with some friends who had also bought tickets. Chris and I sat in row 4 of the lower bowl...holy great seats! Wings won, 5-2; it was a great game to watch and we had a blast.

Lots of Mozz

Ooooo baby, I love me some mozzarella....

I made this meal for lunch for when Mom came to visit. If you don't like cheese, there is something wrong with you, first of all, but turn away now....

Stuffed Mozzarella/Tomato/Basil Chicken
Chicken breasts, hammered flat
3oz mozzarella cheese, per breast (about two thin slices from a block)
1 cherry tomato, per breast
3 leaves basil, per breast
Parmesan cheese, grated

Place chicken breast flat on cutting board. Cut the cherry tomato in half and place toward one end of the breast. Place the cheese and basil on the tomato halves. Tuck the edge of the chicken over the tomato and begin rolling the chicken. Secure the roll with toothpicks until the chicken is unable to unroll. Repeat process with desired number of chicken breasts. Drizzle a small amount of olive oil in the bottom of a glass baking dish. Place the chicken rolls in the dish and drizzle them with a little olive oil.

Season the outside of the chicken with fresh cracked pepper and sea salt. Lightly cover the chicken with grated parmesan cheese and then place the dish in the oven at 350 degrees. Bake the chicken until cooked through and slightly browned, about 40 minutes.


I served the chicken with a simple spinach salad garnished with fresh cut mozzarella, cherry tomatoes, and fresh ground pepper. I used olive oil and cider vinegar as dressing. The flavors were similar to the chicken, so as not to compete with the dish, but it provided a fresh zing to the meal.
